Plus, it’s a great way to use up leftover corned beef if you have it! It is one of my favorite ways to eat corned beef. And it is a family favorite around Saint Patrick's Day.

Recipe
Corned Beef Skillet
Makes about 6 servings
Ingredients:
· 2 cups of diced cooked corned beef
· 3 large potatoes, cooked and cooled
· 1 cup of chopped raw cabbage (red or green)
· 1 cup of sliced raw carrots
· 4 tablespoons of olive oil, divided in half
· 1/4 tablespoon of sea salt
· 1/4 tablespoon of pepper
Directions:
1. First cut the potatoes into one-inch cubes and leave the peel on them.
2. Put a large skillet on the pan and set the heat to medium high. In the large skillet, add the potatoes and 2 tablespoons of olive oil and toss them together. Let it cook for about 3 minutes.
3. Then add the corned beef, cabbage, carrots and rest of the olive oil. Mix them all together in the pan.
4. Then add the salt and pepper and mix well in the skillet pan.
5. Let this cook without a lid for about 15-20 minutes. Mix the pan every 3-5 minutes so that it doesn’t stick to the bottom of the pan. You will notice that some of the carrots and potatoes will start to brown. This means it is done.
6. Remove from heat and let it cool for 5 minutes before serving. Enjoy!
