If you’re looking for a simple, satisfying breakfast or lunch that doesn’t require complicated ingredients, this hard boiled egg, pickle, cream cheese, and chia seed sandwich might surprise you. It’s creamy, tangy, slightly crunchy, and packed with protein and fiber. The eggs make it filling, the pickles add brightness, and the chia seeds give a subtle texture boost. It’s simple, wholesome, and made for real-life kitchens.

Why You’ll Love This Sandwich

  • High in protein

  • Good source of fiber

  • Quick to assemble

  • Budget-friendly

  • Flavor-first, not bland

Ingredient Notes

Hard Boiled Eggs: Cooked until fully set but not overcooked (no green ring).

Cream Cheese: Creates a creamy base that balances the tangy pickles.

Pickles: Dill pickles work best for savory balance.

Chia Seeds: Add fiber and a subtle crunch without overpowering flavor.

Whole Wheat Bread: Pairs perfectly and adds extra fiber and depth.

Optional: Black Pepper or Fresh Herbs: Adds extra flavor.

Flavor Variations

  • Use flax seeds instead of chia seeds

  • Add chopped chives.

  • Add a little Dijon mustard for sharpness.

  • Sprinkle paprika on top.
