Recipe


Green Mashed Potatoes

makes about 6 servings

 

Ingredients:

·         5 medium russet potatoes

·         6 ounces of fresh spinach, washed

·         4 tablespoons of butter, softened

 

Directions:

1.      First blanch the spinach. To blanch to spinach, get a pot of water boiling. Put the spinach in the boiling water for about 3 minutes. Then remove the spinach from the boiling water (you can scoop out with a spoon with holes, or you can pour into a strainer).

2.      Put the spinach and butter in a blender or food processor and mix until smooth. Set this mixture aside

3.      Wash and peel the potatoes. Then boil the potatoes until cooked.

4.      Remove the potatoes from the water and put them into a large bowl. Add 1/4 cup of the spinach mixture.

5.      Mix the potatoes and spinach mixture until smooth or very few lumps.

6.      Add more spinach mixture if you want the green color to be darker and mix again

7.      Enjoy!
